Ingredients

1 cup (200 g) packed brown sugar
1/2 cup (113 g) unsalted butter
1 loaf crusty French bread, 8 oz (227 g), cut into bite-size pieces, or more as needed
2 cups (480 mL) milk
6 large eggs
2 tsp (10 mL) vanilla extract
Topping: 1 tbsp (12-13 g) brown sugar, or to taste
Topping: 1/4 tsp (1.25 mL) ground cinnamon, or to taste

Instructions

Grease a 9 x 13 in (23 x 33 cm) baking dish.
Stir 1 cup brown sugar and the butter in a saucepan over medium-low heat until the butter melts and the sugar dissolves, 2-4 minutes. Pour into the prepared dish.
Scatter the bread over the caramel mixture in a 1 1/2- to 2-in (4-5 cm) layer.
Whisk the milk, eggs, and vanilla until combined. Pour over the bread and press the bread down so it absorbs the custard. Cover and refrigerate for 8 hours or overnight.
Remove the casserole from the refrigerator and discard the plastic wrap. Preheat the oven to 350°F (175°C).
Mix the topping brown sugar and cinnamon and sprinkle evenly over the casserole.
Bake until golden brown and set in the center, 50-60 minutes. Cut into squares and spoon some caramel from the bottom over each serving.

Notes

The printed scan reflects an older version that directed baking at 450°F (230°C) for about 30 minutes. The current tested recipe uses 350°F (175°C) for 50-60 minutes and retains the high-temperature method only as a time-saving option. The lower-temperature method is used here.
