Chocolate Chip Walnut Banana Bread

  1. Preheat the oven to 350°F (177°C). Grease a 9 x 5 x 3 in (23 x 13 x 8 cm) loaf pan and line it with a parchment-paper sling.
  2. Cream the softened butter and sugar with an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  3. Add the beaten eggs and bananas. Mix on medium speed until combined; leaving a few larger banana pieces is acceptable.
  4. Add the flour, baking soda, salt, and vanilla. Mix on low speed only until the dry ingredients are barely incorporated.
  5. Add the walnuts and chocolate chips. Fold gently with a spatula until evenly distributed; do not overmix.
  6. Transfer the batter to the prepared loaf pan. Bake for 55 minutes. Switch the oven off and leave the bread inside for a further 15 minutes. Cool before slicing.

Notes

  • Scaling: half a recipe is best baked in a small loaf pan or as muffins; start checking much earlier. For 2x, divide between two standard loaf pans rather than using one oversized pan. Keep the oven at 350°F (177°C). A 12-slice loaf scales to 6 slices at 0.5x, 18 at 1.5x, and 24 at 2x, but slice count depends on slice thickness.
