Chocolate Chip Walnut Banana Bread

- Preheat the oven to 350°F (177°C). Grease a 9 x 5 x 3 in (23 x 13 x 8 cm) loaf pan and line it with a parchment-paper sling.
- Cream the softened butter and sugar with an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
- Add the beaten eggs and bananas. Mix on medium speed until combined; leaving a few larger banana pieces is acceptable.
- Add the flour, baking soda, salt, and vanilla. Mix on low speed only until the dry ingredients are barely incorporated.
- Add the walnuts and chocolate chips. Fold gently with a spatula until evenly distributed; do not overmix.
- Transfer the batter to the prepared loaf pan. Bake for 55 minutes. Switch the oven off and leave the bread inside for a further 15 minutes. Cool before slicing.
Notes
- Scaling: half a recipe is best baked in a small loaf pan or as muffins; start checking much earlier. For 2x, divide between two standard loaf pans rather than using one oversized pan. Keep the oven at 350°F (177°C). A 12-slice loaf scales to 6 slices at 0.5x, 18 at 1.5x, and 24 at 2x, but slice count depends on slice thickness.
