Ingredients: 500 g (1 lb 2 oz) pork sausage meat; 1 small onion, very finely chopped; 30 g (1/2 cup) fresh breadcrumbs; 1 tsp (5 ml) dried sage; 1/2 tsp (2.5 ml) salt; Black pepper; 500 g (1 lb 2 oz) ready-rolled puff pastry; 1 egg, beaten

500 g (1 lb 2 oz) pork sausage meat
1 small onion, very finely chopped
30 g (1/2 cup) fresh breadcrumbs
1 tsp (5 ml) dried sage
1/2 tsp (2.5 ml) salt
Black pepper
500 g (1 lb 2 oz) ready-rolled puff pastry
1 egg, beaten

Instructions

Heat the oven to 200°C/400°F. Line two baking sheets with parchment paper.
Mix the sausage meat, onion, breadcrumbs, sage, salt and a few grinds of black pepper until evenly combined.
Unroll the pastry and cut it lengthwise into two long strips. Divide the filling in half and shape each portion into a long sausage down the centre of a pastry strip.
Brush one long edge of each strip with beaten egg. Fold the pastry over the filling, press the seam closed and place seam-side down.
Cut each roll into eight pieces. Arrange on the baking sheets and brush with the remaining egg.
Bake for 22-25 minutes, until the pastry is deeply golden and the filling is cooked through. Leave to cool for 5 minutes before serving.

Notes

For apple sausage rolls, mix 75 g (1/3 cup) finely grated apple into the filling and squeeze out excess juice first.
For a cabbage variation, add 75 g (3/4 cup) finely shredded cabbage softened in a little butter and cooled before mixing with the meat.
A pinch of nutmeg, thyme or mustard powder can be added to the filling for a different flavour.
