Ingredients: 4 chicken breasts, 5-7 oz (142-198 g) each, pounded to an even thickness just under 1 in (2.5 cm); 2 tsp (10 mL) Italian seasoning; 2 tsp (10 mL) sea salt or kosher salt; 1 tsp (5 mL) garlic powder; 1 tsp (5 mL) onion powder; 1 tsp (5 mL) cracked black pepper; 1 tbsp (15 mL) olive oil; 8 oz (227 g) fresh mozzarella, sliced into 8 even pieces; 2 vine-ripened tomatoes, sliced 1/2 in (1.3 cm) thick; Fresh basil, to taste; Aged balsamic vinegar or balsamic glaze, to taste

Instructions

Pound each chicken breast to an even thickness just under 1 in (2.5 cm).
Combine Italian seasoning, salt, garlic powder, onion powder, and pepper. Brush the chicken with olive oil and season both sides.
Preheat a grill or grill pan over high heat. Cook chicken for 5-6 minutes per side, until the internal temperature reaches about 155°F (68°C).
Top each breast with 2 mozzarella slices. Continue cooking, covered if helpful, for about 3 minutes, until the cheese melts and the chicken reaches 165°F (74°C).
Transfer to plates. Top each breast with 2-3 tomato slices and fresh basil; season to taste and drizzle with aged balsamic or balsamic glaze immediately before serving.

Notes

Do not cook the chicken fully before adding the mozzarella, or it may become dry while the cheese melts. Use an instant-read thermometer.
