Ingredients: 2 lb (907 g) boneless, skinless chicken breasts; Salt and freshly ground black pepper, to taste; 1 cup (340 g / 240 mL) honey; 1 cup (240 mL) low-sodium soy sauce; 1/2 cup (120 mL) ketchup; 4 tbsp (60 mL) extra-virgin olive oil, vegetable oil, or canola oil; 2 garlic cloves, minced, or 1 tsp prepared minced garlic; 1/2 cup (75 g approx.) diced onion; 1/2 tsp red pepper flakes

Instructions

Trim the chicken, season with salt and pepper, and place in the slow cooker.
Whisk honey, soy sauce, ketchup, oil, garlic, onion, and red pepper flakes in a bowl. Pour over the chicken.
Cover and cook on LOW for 3-4 hours or HIGH for 1 1/2-2 1/2 hours, until the chicken reaches 165°F (74°C).
Remove the chicken and cut it into chunks. Return it to the sauce or serve with the sauce spooned over rice or vegetables.
