Season the chicken thighs with salt and pepper and cook for about 3 minutes per side, until golden. Transfer to a slow cooker.Whisk together the garlic, ketchup, soy sauce, honey, lime juice, Sriracha, and ginger. Pour the sauce over the chicken and toss to coat.Cover and cook on Low for 5 to 6 hours or on High for about 2 hours, until the thickest part of the chicken reaches 165°F (74°C).Serve the chicken over rice and spoon the sauce over the top.NotesEither bone-in or boneless thighs may be used.
